Momo Crown · The beginning of good food
Ingredient Sourcing
The character of a dish begins with its ingredients. Our chef-led approach brings Himalayan warmth and Asian craft to the table, with sourcing principles centred on flavour, suitability and clear information.
Our principles, clearly stated. This page explains the sourcing priorities and supplier expectations we aim to uphold. Details about an ingredient’s origin, composition or certification need to be confirmed for the particular product.
01 Our sourcing approach
Momo Crown is a chef-led food brand, made in-house and quality-first. Our ambition is to give each ingredient a considered role in the food we create, from the balance of a filling to the character of a sauce.
Three priorities guide the sourcing approach we seek to build:
Flavour
Ingredients that suit the intended taste, texture and preparation of the recipe.
Condition
Food that is suitable for its intended use, with attention to handling and storage needs.
Clarity
Reliable ingredient information and supplier details that help explain what we buy.
These priorities belong together. An ingredient needs to work in the dish and be supported by the information required to use it responsibly.
02 Ingredient standards
A useful ingredient specification explains what the product is, how it should perform and how it needs to be handled. The relevant details depend on the ingredient and its intended use.
- Identity & composition
- A clear product description, ingredient composition and allergen information, including the components of prepared ingredients where relevant.
- Recipe suitability
- The flavour, texture, size or other characteristics that matter to the recipe and the way it will be prepared.
- Condition & handling
- Appropriate packaging, date information, storage directions and transport conditions for the particular food.
- Supporting details
- Supplier identification and relevant product, batch or origin information to support questions and follow-up.
Any product-specific shelf life or storage limit must come from the appropriate product information and process. This page does not set one handling rule for every ingredient.
03 Supplier expectations
We seek supplier relationships built on dependable quality, clear communication and honest information. Our expectations include:
- Accurate product information. Specifications, ingredient details and claims that reflect the product actually supplied.
- Appropriate food handling. Controls suited to the ingredient, its storage requirements and the conditions of delivery.
- Clear identification. Records that help identify the supplier, product and relevant delivery or batch.
- Notice of material changes. Timely communication about changes in composition, allergens, origin, manufacturing or certification that could affect the ingredient.
- Responsible business conduct. Lawful operations, truthful documentation and a constructive response to concerns.
The extent of review should reflect the ingredient and the risks involved. A declaration, sample or certificate may be part of a review; its relevance and scope need to be understood.
04 Origin & traceability
Our Himalayan identity expresses our culinary inspiration. Ingredient origin is a separate, product-specific fact, linked to where an ingredient is grown, produced or processed.
For prepared ingredients, the place of manufacture and the origin of their components can be different. A supplier’s address alone does not establish where an ingredient was grown.
Useful traceability information connects the ingredient with its supplier and relevant delivery, batch or date details. These records can help investigate a question, identify an affected product or support a withdrawal when needed.
If provenance matters to your purchase, ask about the particular ingredient or dish . Any origin statement should make clear which product and period it covers.
05 Seasonality & availability
Seasonal and regional options are worth considering where they suit the recipe, quality requirements and reliable supply. Our aim is to assess those options with the same care as any other ingredient choice.
Availability can change with harvests, weather, supply conditions and demand. A proposed change of source needs to be considered for its effect on the recipe, ingredient information and handling requirements.
Descriptions such as “local” or “seasonal” should relate to a clearly identified ingredient, place and period. They should not be read as a promise about every item on the menu.
06 Safety & allergen information
Suitable raw materials and appropriate storage are foundations of safe food preparation. An ingredient’s appearance, aroma or premium description cannot, on its own, establish its safety.
Supplier information needs to support an accurate understanding of composition and allergens. Changes to a prepared ingredient, sauce or seasoning can affect the allergen information for the finished dish.
If you have an allergy, intolerance or a specific dietary requirement, speak with the serving outlet before ordering. Confirm the current ingredients and preparation risks for the complete dish, including accompaniments.
A sourcing story, origin label or vegetarian or vegan description does not establish that a dish is free from allergens. If suitability cannot be confirmed, do not order or consume that item.
07 Responsible sourcing
We aim to consider the wider responsibilities connected with ingredients and supplier relationships. Our priorities include:
- Respect for people. Lawful employment, safe working conditions and respectful treatment throughout the relationships we seek to build.
- Animal welfare. Where animal-derived ingredients are involved, relevant information about sourcing, handling and welfare practices.
- Care for resources. Thoughtful consideration of packaging, transport, storage and avoidable food waste alongside quality and safety.
- Honest claims. Specific, supportable statements about origin, production methods, certification or environmental impact.
These are sourcing priorities. Measured results, certification status and claims about an entire supply chain require evidence for the stated scope.
08 Changes & ongoing review
Ingredient sourcing needs review as products, suppliers and recipes develop. Our intended approach is to understand a proposed change before relying on it in preparation or customer information.
- Review the revised specification and relevant supplier information.
- Consider the effect on flavour, preparation, allergens, dietary descriptions and any origin or certification claim.
- Update the affected recipe, instructions or product information where needed.
- Resolve significant gaps or concerns before the ingredient is accepted for its intended use.
Feedback from the kitchen, guests and suppliers can help identify issues that deserve further review. Digital records can support that work when the information is accurate and kept useful.
09 Questions about an ingredient
A precise question makes it easier to identify the relevant information. Please tell us the dish or ingredient, the outlet and, if applicable, your order date or product details.
- Origin
- Ask about the particular ingredient and whether the information concerns where it was grown, processed or manufactured.
- Composition
- Ask for current ingredient information, including the relevant components of prepared sauces, seasonings or other products.
- Certification
- Ask which product, supplier or facility a claim covers and whether the supporting evidence is current.
